Gummy Candy

Ingredients:

½ cup liquid (not pineapple and see notes if using only citrus) – our favorite is leftover strawberry lemonade smoothie!

3 tablespoons unflavored gelatin (we use this)

Up to 3 tablespoons honey or other sweetener

Tools: Silicone molds (mine are from target but I’m wanting this one too)

 

This is pretty much my favorite, quick, on-the-go snack for the kids. My kids call it candy and think they are eating a gummy snack like other kids get! I know that while it is yummy and cute, it is also healthy.  It has protein in the gelatin to balance the sugars (important for my son). The gelatin is a literal superfood. It aids digestion, helps the absorption of nutrients, and has been shown to help heal the digestive system – all essentials for allergy kids! It also has bio-available calcium, magnesium, phosphorus, and other trace minerals and is a great way to add amino acids to your diet.

How-to:

The ½ cup of liquid can be fresh juice, a favorite 100% juice, a thin smoothie (see my recipe below for our favorite), pureed fruit with water to thin it. Basically any liquid thinned to the consistency of juice. I most often use leftovers from making smoothies for the kids.

Mix liquid (don’t warm the liquid in any way first), sweetener (to taste), and gelatin in a small pot and allow to sit until the gelatin absorbs the liquid. It will become really thick and swell up. Then heat the mixture on medium low until melted and liquid. Pour carefully into silicone molds (I use two small ones from the Target dollar bins for one recipe). Place in the freezer for 15 minutes. Pop out of molds. They will keep their shape out of the fridge for carrying places (they get sticky left in a hot car though), but I normally store in the fridge.

Notes: Citrus seems to be odd, it takes more gelatin. I would recommend 4.5 tablespoons gelatin for ½ cup citrus juice. If you just add a touch of lemon juice (seems to enhance the flavor a lot), the extra gelatin is not needed. For example: Fresh squeezed orange juice needs 4.5 tbls to avoid stickiness. Strawberry Lemonade Smoothie

3oz frozen strawberries

1/2 tablespoon lemonade

3 cups water

Blend well in blender. Use any leftovers for gummies!

      Apple juice will work fine. I found apple juice rather mildly flavored and not our favorite. A squirt of lemon juice with it tasted yummy though. Just a squirt of lemon juice still works with the original 3T recipe.
